Have more peaches than you know what to do with? If you’re looking for fresh ideas (literally) and want to mix it up a little, here are three delicious peach recipes (plus a bonus 5) that will really shake up your end of summer dining plans.

The Classic Dessert: Peach Cobbler
This one is tried and true and couldn’t be any easier (or more of a crowd pleaser). Don’t forget the vanilla ice cream!

Ingredients:

5 large or 9 small peaches, sliced

1 cup sugar (1/4 cup reserved for peach mixture, 3/4 cup reserved for cobbler topping)

1 cup flour (or gluten free flour)

1/2 cup salted butter, melted

1 tsp vanilla

1 tsp baking powder

A pinch of salt

Vanilla ice cream (optional…but is it really?)

 

 

To Make:

  1. Grease a 9×13 baking pan with butter.
  2. Preheat oven to 350 F.
  3. Slice up your peaches and toss them straight into your prepared pan. Top with 1/4 sugar and toss together.
  4. Combine remaining 3/4 cup sugar, flour, melted butter, vanilla, baking powder, and a pinch of salt until it forms a dough-like consistency.
  5. Top the peaches with crumbles of your cobbler topping until fully covered, gently press down.
  6. Place in the oven for 35 minutes until bubbly and just starting to get crispy on top.
  7. Turn your oven to high broil and allow the cobbler to broil for 3-4 minutes to brown the top.
  8. Serve in bowls and top with vanilla ice cream and enjoy!

 

The Effortless Treat: Grilled Peaches
If you thought the peach cobbler was easy (isn’t it though?), wait until you wow your guests with this one.

Ingredients:

Fresh peaches, halved (qty based on how many people you’ve attracted to your yard with the scent from your grill, half a peach per serving)

Olive oil

Mascarpone

Honey

Mint or basil (optional)

 

 

 

 

 

To Make:

  1. Preheat your grill (or grill pan) to medium heat.
  2. Brush cut side of peach halves with olive oil.
  3. Place cut side-down on your grill. Grill for about four minutes.
  4. Top with mascarpone (or vanilla ice cream) and drizzle with honey. Top with a little mint or basil if you’re feeling extra fancy. Enjoy!

 

The Take-Anywhere Appetizer: Fresh Peach Salsa
Whether you have it at home or bring it to a friend’s summer get-together, you can’t go wrong with this fresh appetizer.

Ingredients:

3 large peaches, diced

1.5 cup fresh tomatoes, diced

1/2 cup red onion, finely diced

1/2 cup cilantro, chopped

1 jalapeño, finely diced

2 Tbsp lime juice

Salt to taste

For serving:

Tortilla chips

 

To Make:

  1. Combine all ingredients in a medium bowl.
  2. Add salt to taste.
  3. Serve with tortilla chips, on a crispy baguette, or use it to top your favorite tacos!
